Paleo Vegan Chocolate Chunk Blondies

  • 2 T ground flax or chia seeds
  • 6 T filtered water
  • 2/3 C + 2T coconut sugar can substitute granular monk fruit sweetener for a low carb option
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 C almond butter
  • 2 tsp vanilla
  • 1 cup chopped paleo dark chocolate bar or paleo chocolate chips
  • 1/2 cup chopped pecans or other nuts
  • Coarse sea salt


  1. Preheat oven to 350
  2. Line a 9x13 pan with parchment paper
  3. Mix 2T ground flax or chia seeds with 6T water, set aside to gel about 10 minutes
  4. In a bowl mix 2/3c + 2T coconut sugar, 1 tsp baking soda, 1/2 tsp salt
  5. Whisk together to break up any clumps
  6. Add 2C almond butter, 2 tsp vanilla, and ground seed gel. Mix until well combined.
  7. Stir in 1 cup of chocolate chips or chopped chocolate and 1/2 cup chopped pecans
  8. Mix until combined
  9. Press into the parchment lined baking dish
  10. Top with sprinkling of sea salt
  11. Bake at 350 for 20 minutes
  12. Remove from oven and let cool before placing in the refrigerator
  13. Refrigerate at least an hour before cutting
  14. Cut into desired size squares and store in the refrigerator.
