Paleo, Gluten Free, Dairy Free, Refined Sugar-Free, delicious bars for any sweet-treat occasion.
Preheat oven to 350, line a 9x13 baking dish with parchment paper
in a large bowl, sift together almond flour, coconut flour, monk fruit granules and salt
add coconut oil and almond butter
combine with a fork. Dough will be crumbly.
set aside 1/4 of the dough mixture for use as topping later
press remaining 3/4 of dough mixture into the lined pan
bake for 12-14 minutes
add all the filling ingredients to a saucepan. Combine and simmer over low heat, stirring until thickened, 8-10 minutes.
Pulse 1/3 cup of nuts into fine pieces
Combine nuts, remaining 1/4 of shortbread dough and cinnamon with a fork
spread apple filling evenly over shortbread layer.
Crumble topping mixture over the apple layer
Bake for another 20-22 minutes
Let cool on the stove top for 20 minutes
Finish cooling in the fridge for at least an hour before cutting.
Remove from pan and cut into bars, store in the refrigerator.
