Well, I have a new problem. I cannot stop eating these paleo chocolate chunk blondies! I knew I had a strong attachment to dark chocolate, but now I have a serious problem! This recipe whips up fast, it’s so easy to make you’ll be devouring it in no time. Hopefully with minimal guilt! It is dairy free, gluten free, and refined sugar free, after all.
Yes, I said gluten free, dairy free, refined sugar free – egg free, too! these blondies can even be low carb if you choose to use a sugar substitute. I honestly don’t even know how they work. There are no eggs, no flour, just a few simple ingredients and voila – you have true decadence, and potential obsession (you’ve been warned!)
When I make these for parties or events, everyone goes nuts. People are genuinely surprised that a gluten free dessert could actually taste good. Better than good – delicious! The usual comment is “these are healthy??” And while there are a lot of interpretations of the word “healthy,” I consider the ingredients in this recipe much less harmful than what you could buy pre-made in a grocery store. They are free of the most damaging ingredients on our store shelves.
You can call it “clean” or “healthy” or whatever you want. My favorite part of making these types of dessert recipes is feeling GREAT about serving the people I love something that won’t harm them. Delicious gluten free, dairy free, grain free dessert or snack recipe. Made with almond butter.
- 2 T ground flax or chia seeds
- 6 T filtered water
- 2/3 C + 2T coconut sugar can substitute granular monk fruit sweetener for a low carb option
- 1 tsp baking soda
- 1/2 tsp salt
- 2 C almond butter
- 2 tsp vanilla
- 1 cup chopped paleo dark chocolate bar or paleo chocolate chips
- 1/2 cup chopped pecans or other nuts
- Coarse sea salt

Preheat oven to 350

Line a 9x13 pan with parchment paper

Mix 2T ground flax or chia seeds with 6T water, set aside to gel about 10 minutes

In a bowl mix 2/3c + 2T coconut sugar, 1 tsp baking soda, 1/2 tsp salt

Whisk together to break up any clumps

Add 2C almond butter, 2 tsp vanilla, and ground seed gel. Mix until well combined.

Stir in 1 cup of chocolate chips or chopped chocolate and 1/2 cup chopped pecans

Mix until combined

Press into the parchment lined baking dish

Top with sprinkling of sea salt

Bake at 350 for 20 minutes

Remove from oven and let cool before placing in the refrigerator

Refrigerate at least an hour before cutting

Cut into desired size squares and store in the refrigerator.
