As a matter of principle, I don’t generally consider baked goods a regular part of a high quality primal/paleo lifestyle for a couple reasons: if you are consuming baked goods every day – even paleo compliant – you’re probably perpetuating some form of addiction or filling an emotional void. And, even when primal approved, a lot of baked goods, especially pre-packaged, can still be high in sugar keeping you on a crazy insulin roller coaster. 

Nonetheless, I have found myself baking a lot lately. Sharing something freshly baked provides a new entry point to reaching people who are averse to anything “healthy.” Baking paleo compliant, low-glycemic donuts and cupcakes that taste as good as – or better than – conventional goods has helped people consider that maybe they wouldn’t have to completely suffer if they put more consideration into quality foods.

We live in a world swirling with special occasions  – if we nibble on every donut, cake, and cupcake that we are presented with we will certainly undermine our precious health. 

So celebrate by creating something with love that says “I want to be around and stay healthy to celebrate this next time too.” Baking items devoid of damaging industrial seed oils; uncontaminated by refined high-glycemic flours, grains and sugars; free from preservatives, additives or food coloring – this is how we celebrate! This is how we show love for our bodies without giving up the traditional elements of celebration like baked goods.

I’m always so happy when a “conventional” eater gushingly enjoys something I’ve made. When you remove all the junk and just combine clean ingredients, food tastes amazing!

Delicious baked donuts made from clean, healthy ingredients

Ingredients
Sift together dry ingredients:
  • 1 cup almond flour
  • 1/3 cup organic coconut flour
  • 1 T tapioca starch/flour
  • 1/3 cup organic coconut sugar
  • 1/3 cup granulated monk fruit sweetener
  • 1/2 cup organic cacao powder
  • 3/4 tsp baking soda
  • 1/4 tsp espresso powder (optional)
  • 1/4 tsp salt
Whisk together wet ingredients:
  • 2 organic eggs at room temp
  • 1/2 cup organic full fat coconut milk
  • 1/2 cup water
  • 2 1/2 T organic coconut oil melted
  • 1 tsp organic apple cider vinegar
  • 2 tsp vanilla
Instructions
  1. grease donut baking pan with coconut oil

  2. Combine wet and dry ingredients separately before mixing together.

  3. fill donut cavities 2/3 full.

  4. Bake at 350 for 30 minutes or until a toothpick comes out clean.

  5. Let cool in pan for 10-15 minutes, remove donuts and finish cooling on a cooling rack
  6. Once cooled, dip in chocolate glaze and refrigerate to harden.

Ingredients
Melt together over low heat:
  • 1/2 dark chocolate bar or 1/4 cup paleo chocolate chips
  • 2 T coconut oil
Instructions
  1. Dip donuts in glaze, refrigerate to harden.
