I’ve made this paleo dessert recipe for several events and gatherings lately. People are going crazy over it! There’s something so comforting about the simple, traditional taste of apple pie. It’s always important to me to stay true to expected flavors and textures (in this case apple pie) but leave out the junk. Gluten, dairy and grains be gone! Enter: apple pie crumb bars. I love these paleo vegan apple pie crumb bars as a healthy dessert or a snack. What an easy alternative to junky, processed stuff from the grocery store! Paleo Apple Pie Crumb Bars

Ingredients
Shortbread Layer
  • 3 cups almond flour
  • 3 T coconut flour
  • 3 T coconut sugar or granulated alternative sweetener
  • 3/4 tsp salt
  • 1/2 cup coconut oil soft or melted
  • 1/4 cup almond butter (can substitute with other nut butter or more coconut oil instead)
Apple Layer
  • 3 cups diced organic apples (about 3 apples)
  • 1/4 tsp salt
  • 1 1/2 T arrow root powder
  • 3 T maple syrup
  • 3 T coconut sugar
  • 3 T filtered water
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp All Spice
Crumb Topping
  • 1/4 c shortbread dough
  • 1/3 c chopped pecans (or substitute almonds or walnuts)
  • 1/4 tsp cinnamon
Instructions
To make the shortbread:
  1. Preheat oven to 350, line a 9x13 baking dish with parchment paper

  2. in a large bowl, sift together almond flour, coconut flour, monk fruit granules and salt

  3. add coconut oil and almond butter

  4. combine with a fork. Dough will be crumbly.

  5. set aside 1/4 of the dough mixture for use as topping later

  6. press remaining 3/4 of dough mixture into the lined pan

  7. bake for 12-14 minutes

To make the apple filling:
  1. add all the filling ingredients to a saucepan. Combine and simmer over low heat, stirring until thickened, 8-10 minutes.

To make the topping:
  1. Pulse 1/3 cup of nuts into fine pieces

  2. Combine nuts, remaining 1/4 of shortbread dough and cinnamon with a fork

Adding the layers:
  1. spread apple filling evenly over shortbread layer.

  2. Crumble topping mixture over the apple layer

  3. Bake for another 20-22 minutes

  4. Let cool on the stove top for 20 minutes

  5. Finish cooling in the fridge for at least an hour before cutting.

  6. Remove from pan and cut into bars, store in the refrigerator.
